Last week we began harvesting some beautiful cabbage. They are quite cute, dense spheres and I can’t wait to start eating them. Many people don’t like cabbage but I think they’re great because they are healthy and tasty. Cabbages are high in vitamin C, vitamin K, folate, and fiber. Cabbage also has anti-inflamatory properties, as well as a chemical which boosts cell repair and appears to block the growth of cancer cells. This website has even more detail on the health benefits of cabbage!
Now that you know cabbage is healthy, here are some delicious looking recipes to try:
- This creamy Danish cabbage side dish seems strange at first, but I fell in love with it when I lived with a host family in Denmark (substitute frozen cabbage for fresh cabbage): http://www.yummly.com/recipe/Danish-Groenlangkaal-_green_long_cale_-Recipezaar
- This warm cabbage salad would be delicious with Stella Garden cabbage and carrots (which will hopefully be ready in a few weeks!): http://greenlitebites.com/2011/02/17/warm-cabbage-salad-with-carrots-and-thyme/

Cabbage is cheap, healthy, and tasty! So, get excited. It’s cabbage season!
