GULFS at Badger Rock Middle School

MFAI staff engaged with over 50 students from Badger Rock Middle School in December, through our Growing Urban Leaders in Food Systems (GULFS) program. Leah Sandler and Donale Richards worked with Sarah Karlson to develop a lesson centered around root vegetables. Each of the four classes were split in half and rotated to two stations, one being in the hoop house and the other in the kitchen. In the hoop house, Leah led students in constructing garbage can root cellars which is a low cost, simple refrigeration method for storing produce during the cold months. In the kitchen, Donale shared Jamaican foods and drinks made using ginger, carrots, potatoes and cassava. At the end of each class, students were able to eat the foods they prepared which include bammy, veggie patties, carrot juice and ginger beer.
