GULFS Lesson at Badger Rock Middle School

After volunteering with Badger Rock’s garden class in South Madison for some time, coordinators of the GULFS Program (Growing Urban Leaders in Food Systems) at MFAI worked with an incredible team at Badger Rock to co-develop a new lesson featuring Associate Policy Director Devon Hamilton’s culinary trip to Benin, West Africa. The lesson, entitled Food FUBU (Food For US, By Us), helped teach the youth about the cultural connection of West African cuisine as it relates to the identity and history of Black Americans today. Youth learned about the country of Benin and how to make from scratch four West African dishes: Fufu, Wagashi Cheese, Akara, and Grilled Plantains. A community cooking lesson with adults and their children also experienced a night of making these four dishes, and the week was culminated with a Community Dinner night, showcasing the student’s hard work alongside a garden market, other community chefs, and a keynote speaker. We look forward to continuing learning from and working alongside schools and community organizations like Badger Rock!
