Welcome to The Hive Taproom

The old Nokomis Bakery has been revamped into The Hive Taproom by owners, Tim and Ayla Guild.  The Hive Taproom is Wisconsin’s newest craft brew taproom specializing in cold, dry, and carbonated honey wine as well as Jun kombucha, a naturally probiotic drink that approximates a sour beer. The Taproom features seasonal, small batch, and rotating taps. Their beverages are made on site with locally sourced honey, hops, and organic produce with a range from dry hopped to semi-sweet to barrel-aged beverages all around 5-7% ABV.

Tim says his mead has the Better Buzz: “Drinking our honey wine surprises many people, that it’s not overtly sweet like a traditional mead. It’s naturally gluten free and through our careful processing, the medicinal properties of raw honey are maintained.”

Tim and Ayla are a husband & wife duo who are passionate about creating a space where face-to-face conversations take precedence over technology. Tim, the Brewer, is a reformed technology junkie/engineer/consultant who has found his niche making people smile with a delicious product that is good for you. Ayla, the Creative Director, is a large animal veterinarian who has found a calling keeping bees and flexing her creative muscles to create an environment that is welcoming to all ages and backgrounds.

Michael Fields welcomes our new neighbors and their bees to the Institute’s Gardens. The Hive’s Grand Opening is Friday, July 27th, 3-9pm, featuring Gypsy Soul food pairings.   Check out The Hive Facebook page for updates on music and additional food offerings!
